Rabi'I Day
I made this interesting and tasty breakfast this morning. I had a head of broccoli that I needed to use up so I chopped it up and kind of fried/sauteed it with some garlic and a little olive oil and added small amounts of chicken broth so the broccoli would cook without burning or drying out. When it was cooked and the broth had evaporated added 2 beaten eggs. When the eggs were all cooked I melted shredded cheddar over the top. I find that when I put it on top rather than scramble it in with the eggs I can use less and it seems cheesier. It was good.

Sophie's all tucked in!
I've been wanting to make these painted cookies for a long time - they turned out so well! For the cookies I beat a cup of butter and 3oz cream cheese then add a cup of sugar, an egg yolk and a tsp vanilla. Mix in 2 1/2 cups flour. I chilled the dough overnight then rolled out to about a quarter inch thick and baked on parchment at 350 degrees for 8 minutes.
For the icing I mixed 1 cup powdered sugar, 2 1/2 tsp milk, 2 1/2 tsp corn syrup and 1/4 tsp vanilla. I piped the white around the edges and then filled them with the same icing but colored.

National Call In Single Day
Sophie had bedhead this morning!
I made these vanilla scones for breakfast, they were great! Combine 2 cups flour, 2 tsp baking powder, 1/2 tsp salt, 1/2 cup sugar. Cut in 5 TBS butter. In another bowl combine 1 cup plain yogurt (or sour cream), 1 egg yolk and 2 tsp vanilla. Add wet ingredients to dry and mix until the dough comes together. Pat into a circle and cut in wedges, but don't separate. Bake at 400 degrees for about 12 minutes. Glaze while hot with powdered sugar mixed with a little milk and vanilla.
I made broccoli walnut & blue cheese pasta for dinner. Cook the penne, add some broccoli towards the end of the cooking time. Fry chopped walnuts in oil for about 1 minute. Drain pasta & broccoli. Add creamy style blue cheese, cubed. Stir until the cheese melts. It was really good!

Blame Someone Else Day
This is my lunch at work today. We have a choice of several different entrees and it's $2.00! And people actually complain about it! We don't even have to bus our own dishes. Anyway, it's a great deal no matter how you look at it.
We had "The Almost Newlywed Gameshow" at work. They made a wedding cake to serve afterwards.

Laugh and Get Rich Day
I got this great pumpkin around Halloween time but I changed my plans and didn't wasn't in town for Halloween so it's just been sitting in our entry way - one of the warmest spots in the house - ever since! I finally got around to it and figured it would be funny to have a Valentine's pumpkin! I separated the seeds, washed and left them out to dry for a few hours. Then I roasted them at 350 for aboout an hour, then mixed some oil and sugar in a skillet, added the seeds and stirred until it seemed done and then tossed them in a mixture of sugar, pumpkin pie spice and salt. YUMMY!
